Avocado Garlic Toast Two Ways

When I only get to prepare dinner for myself at 10pm, I need something quick and not too heavy. Last evening I was in such a situation. So I made myself a scallops and orange salad and wolf it down within minutes because I needed to put my baby to bed. As I was breastfeeding her I was thinking about what I could fix as a second course after she’d fallen sleep as I felt unsatiated. A quick run through my mind on what I had in the fridge and I decided on avocado toast because it’s easy and avocado makes almost everything good, somewhat like chocolate!

It seems odd sharing a recipe on avocado toast (because it’s so simple) but trust me this is no run-of-the-mill avo toast, it IS the best version I’ve made and tasted, if I may say so. The combination of flavours and different textures made my mouth do a happy dance! And I think if you like avocado, you need this Avocado Garlic Toast in your life right now too!

Avocado Garlic Toast Two Ways

Creamy, garlicky and crunchy avocado toasts that'd make your mouth do a happy dance!


  • 1/2 medium avocado, ripe but firm
  • 2 slices of your preferred bread
  • 1 tbsp hummus
  • 1 - 11/2 tbsp good quality extra-virgin olive oil (evoo)
  • 1 clove garlic
  • a squeeze of lemon juice
  • sea salt*, to taste
  • freshly ground black pepper, to taste


  • Slice the avocado half into approximately 8 slices vertically.
  • Remove skin of garlic clove.
  • Heat up your grill pan until hot.
  • Brush both sides of the bread slices with evoo and grill until browned but not hard.
  • Quickly grill the avocado slices on both sides.
  • Grate a bit of garlic on one side of the toasts and spread or simply rub the garlic cloves on one side if you prefer a milder garlic flavour.
  • On one toast, spread a tablespoon of hummus and top with half the avocado slices on garlic side, lightly brush some evoo on the avocado.
  • Top the other toast with the rest of the avocado slices on the side with garlic and lightly squeeze some lemon juice over it.
  • Season both toasts with sea salt and freshly ground black pepper.
  • Eat it immediately. I bet you can't wait for another second anyway!


*I used smoked sea salt and it gave this simple dish such an amazing flavour!
