Happy National Day! We'll be munching on this Salted Egg Brownie while watching the National Day Parade this evening. 😃

Most salted egg pastries/dishes use the yolk part of the salted egg but I've decided to use both the yolk and the white so #nowaste. Also I like salt with chocolate, hence it made perfect sense to include salted egg white here. It performs the same function as the Maldon Sea Salt flakes that I use on chocolate brownie/cookies.

All about streamlining these days. People used to ask me, "How do you do it homeschooling all three children?" I find myself asking how working mums with school-going children do it!

I made these "mini babka rolls" last night to test out if I can minimise morning frenzy by cutting the job of putting spreads on toasts in the morning. I decided to work the chocolate spread "into" the bun so it can be grab-and-go. I also experimented with freezing shaped dough and baking it the next morning to see if it yields a different result from same-day bake. I can't wait to try it when it cools a little! If the texture and taste does not suffer, then I'm gonna be freezing shaped buns more often!

Bread recipe from @sulyntan; I used the shokupan (standmixer) recipe with Nutella, again incorporating whole wheat flour. I also couldn't resist sprinkling a little sea salt flakes on top for a hit of saltiness. If you know me, you'll know I almost always include salt in bakes with chocolate.

Note: Babka is traditionally made with oil, Sulyn's recipe is made with butter but way less butter than a brioche recipe.

"Cringeeeey!" I can see my daughter, Avisha, say that with the most crumpled grimace imaginable.

The name of this cookie was originally "Famous Felicia Cookies" as almost all who have tried it commented it tasted like a less sweet version of the Famous Amos cookies, so the "Famous Felicia Cookies" was born. However, as I was designing the label, Avisha asked, "Are you infringing on copyright?" Was I or was I not? I decided to change the name anyway, thus "Fabulous Felicia Cookies" replaced the old name. We thought the alliteration would make it easy for people to remember too.

As I was staring at this bottle of "Fabulous Felicia Cookies", I felt a sense of comfort because it's a reminder that my life can still be fabulous despite a rough 2021. "Rough" is understating it. But I survived with God's grace and in 2022, Fabulous Felicia is going to be better! 😁

I always have difficulty deciding what sort of birthday cake to bake for my children as they are not fans of cake. So for my lastborn's birthday, I thought an ice-cream cake would be a better idea as they like ice-cream. The theme is decided by her.
